Pizza with mushrooms & fresh herbs

Materials

For the dough

  • 500g of type 00 flour
  • 300g lukewarm water
  • 20g fresh yeast
  • 1 teaspoon of honey
  • 1/2 tsp. salt 2 tbsp. olive oil

For the garnish

  • 1 1/2 cup of sliced mixed mushrooms
  • 1 tablespoon of chopped fresh thyme and oregano
  • 1/4 teaspoon plus 1 pinch of salt
  • 1 tablespoon of olive oil
  • 1 tablespoon fresh lemon juice
  • 3/4 cup grated gouda
  • 2/4 cup goat cheese
  • 1 to 2 tablespoons chopped chives

Execution

Dough

In a bowl, add the water, yeast, honey, olive oil and mix until the yeast melts. Add the flour, salt and knead. Allow to rest for 45 minutes. Preheat the oven to 280oC.

Garnish

Cut the mushrooms into slices. In a pan, sauté the mushrooms with 1 tablespoon of olive oil. Add the chopped herbs and 1/4 teaspoon salt and cook for about 5 minutes, stirring occasionally. When the mushrooms are tender, reduce the heat and add the lemon juice. Remove from the heat. Take a baking pan lined with parchment paper, sprinkle some flour and spread the dough in a round shape evenly. Brush it with a thin layer of olive oil and then spread the dough on the surface. gouda cheese, the cooked mushrooms and crumble the goat cheese. Cook until the edges are golden brown (5-7 minutes). Garnish with chopped chives and 1 pinch of salt. Cut into pieces and serve immediately.
